Pepper Steak

Chef OK, I admit it. I've given up looking for the fountain of youth. But now I have shifted my focus on a search for the fountain of middle age. If you have not arrived to where I am, perhaps with the passage of time you will get it.

So I'm on a quest to burn the paunch off my core. This is another recipe designed to be low in fat and deliver protein. In a continued journey to look better in clothes, there must be a change in life style. You know, exercise and healthy diet. I'm seeing results.

INGREDIENTS

1/2 lb sirloin, sliced diagonally into thin strips
1 cup bite-size pieces red or green bell pepper (or 1/2 cup of each)
1 cup bite-size pieces onion
2 tablespoons reduced-sodium soy sauce
1 1/2 teaspoons olive oil
1 clove garlic, crushed
1 teaspoon red-pepper flakes

PREPARATION

Preheat an iron skillet on medium-high, coated with olive oil.

Dump all the ingredients into a large ziplock plastic bag. Go buff on it- shake it. Really give it a hard throttle. You want the soy sauce and oil to permeate everything in the bag.

Pour the meat, sauce, and vegetables into a medium-hot cast-iron skillet, stirring frequently until the meat is seared and the vegetables begin to lose their water (2 to 3 minutes).

Serve with 1 cup of Uncle Ben's Ready Rice, Whole Grain Brown (the kind you can microwave in 90 seconds).
