Uncle Joe's Southwest Chicken Soup
Uncle Joe watches what he eats and he keeps fit. With that said, his soup is designed as low in fat. Joe always opens his house to our family when we are traveling. And it is not uncommon to find him in the kitchen when we arrive making a pot of his special southwest chicken soup. One has to wonder, how can something be so good and yet so easy to make. I think the hardest part is going to the local Kroger and navigating the isles for the ingredients. Get your grocery list and jot down these ingredients.
INGREDIENTS
1 cooked rotisserie chicken chopped
5 tablespoons olive oil
1 small red pepper diced
1 small yellow pepper diced
1 small green pepper diced
1 medium onion chopped
2 carrots chopped
1 48-oz can of Great Northern beans (I like the beans in a jar)
1 14 ounce can of mixed greens
1 16 ounce jar of salsa
6 cups of reduced-sodium chicken broth (1 1/2 quarts)
1 4 ounce can of Green Chile Peppers diced
1 clove minced garlic
PREPARATION
In a soup pot, add the olive oil, when sizzling add the vegetables and garlic until softened, 5-8 minutes.
Add the beans, salsa, greens, broth and chopped chicken, bring to a boil, reduce heat and simmer 20 minutes. Taste and adjust salt and pepper seasoning. Serve with an optional topping of grated pepper jack cheese and an ice cold Diet Mountain Dew. Makes 6 servings.
